Ghee have emerged a favorite ingredient as topping, in cooking and while baking. Unlike many oils that have a smoke point at which they break down and form free radicals, Ghee features a considerably high smoke point means it’s more versatile, less splatter and thus considered the safest medium for frying as compared to other subtle oils like canola or coconut.
Sauteing, frying, roasting, dipping and baking — Ghee does it all.
What is Desi Ghee
Ghee is a clarified butter that has been simmered and strained to remove all water and milk solids. Due to the slow and low temperature cooking, the milk solids gets brown, imparting a nutty, slightly caramelized flavour to the ghee. Once the milk solids are strained, the ghee is shelf stable.
Both ghee and Clarified butter start as butter, which is composed of three key ingredients — milk fat, milk solids, and water.
- To make clarified butter, you remove the milk solids and water
- To make ghee, you have to take this process one step further to coax out a toasty, caramelized aroma and deep golden yellow colour.
A staple ingredient in Indian cooking, ghee has recently gained attention for its association with low-carb, high-fat diets such as Keto and Paleo.Ghee is the cooking fat of choice for Indian dishes and cuisines across Asia. It’s also used as a skin moisturizer in Ayurvedic medicine, a holistic healing system that originates from India.
How to use desi ghee in recipes?
1. Dairy-free elixirs
Dairy-free elixirs are a favourite of ours. Nut/seed milk, protein, herbs, and spices, as well as natural sweeteners and healthy fats, are all included in these delicious drinks. Adding ghee to your elixirs will give them a creamy texture.
2. As a cooking oil
You can use desi ghee for stir-frying, sautéing, or roasting your delicacies, which is one of our favourite ways to cook with ghee. In your pan, melt a tablespoon and add more as necessary.
3. Melted over steamed/roasted veggies
Onions and broccoli are two of the most popular veggies among children and can be made more appealing by adding a bit of ghee. Besides adding a flavour to the veggies, it gives your dish an irresistible aroma.
4. Spread on baked goods
Gluten-free crackers, muffins, or other baked goods can be topped with grated ghee. It can be used for both sweet and savoury dishes!
5. In gluten-free baking
Ghee is not only great for baking gluten-free goods, but it’s also fantastic in recipes. There are many places where you can substitute ghee for butter or coconut oil.
6. Popcorn topping
Drizzle a little warm Ghee over popcorn for an easy nutritious snack. A tasty popcorn topping is made by melting herb- and spice-infused Ghee together with popcorn kernels.
7. Mashed potatoes or mashed root veggies
Ghee gives your mashed potatoes flavour and creaminess. As an alternative to potatoes, you can use it to mash up root vegetables like parsnips, carrots, celery root or turnips.
8. Oatmeal
Incorporate your favourite oatmeal or porridge into your regular cooking routine to add some healthy fats to your morning meal. Desi Ghee can be used to make sweet or savoury porridge, as well as hashes, omelettes, congee, and pancakes.
9. Cooked gluten-free grains
Ghee enhances the flavour of gluten-free grains. Choose from rice, millet, quinoa, teff, or buckwheat!

Here we are sharing with you the recipe from one Nova’s customers:
Recipe: Dry Fruit Churma Voyage Cake
Ingredients:
For dry fruit filling in cake
• 4–5 dates 3–4 walnuts 7–8 raisins
• 5–6 candied cherry or fresh 2–3 dried prunes/plums 3–4 tsp
• Nova shudh ghee
For Churma cake base
• 120 gm whole wheat flour
• 3 tbsp Nova shudh ghee
• 20 gm powdered almonds
• 50 gm powder sugar
• 100 gm egg whites
• 60 gm powder sugar for egg white dark chocolate for garnish cherry
For garnish Method and the dry fruits filling:
(1)In a hot water soak dates, walnuts, raisins, cherries and prunes for 2–3 hours
(2)Drain water and then blend it in mixer grinder till everything combined
(3) Heat a pan, add nova ghee, then add the mixture to it and cook, till it become thick and get combined.
(4) Remove from heat and cool it down completely.
For cake base:
(1) In a pan heat 3tbsp nova shudh ghee and then add whole wheat flour and roast it for 10 min till light golden in colour and then add powdered almonds and mix.
(2) Let this mixture cool down completely and then add 50 gm powdered sugar and mix it nicely.
(3) In a bowl add egg whites and start whipping it and then slowly add 60 gm powder sugar till it combines and it get double in volume.
(4) Now slowly add wholewheat flour mixture to it and mix gently till everything combines well.
(5) Now take a cake pan lined with parchment paper and pour some batter in base and then pipe dry fruits filling on it and then again pipe remaining cake batter using flower nozzle or by cutting piping bag in v shape, you can pipe in any shape.
(6) Bake this in preheated oven for 25 min @1700C
(7) Once baked cool down completely and garnish with chocolate and cherry on top and dust some sugar.
